Somerton Merlot 2011

The fruit was sourced from a range of our premier grape growing regions in Victoria, NSW and South Australia. The fruit was harvested during March in the cool of the night at its optimum ripeness. The grapes were crushed and fermented on skins in stainless steel fermenters with the temperature controlled between 20-25 degrees Celsius. The fermentation was managed daily to extract maximum colour and flavour from the fermenting skins.
